Caramel Custard

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. In an enamelled saucepan, melt the caster sugar over medium heat, stirring constantly until it turns a rich brown.

  2. Carefully stir in 2 tablespoons of hot water and the lemon juice into the melted sugar.

  3. Pour the caramel into a mold or cake tin, coating the sides.

  4. Heat the milk until near boiling, then add the sugar and vanilla.

  5. Whip the eggs, then slowly stir in the hot milk to avoid curdling.

  6. Pour the custard mixture into the tin over the caramel.

  7. Place the tin in a larger tin filled with hot water and bake at 350°F (175°C) for about 20 minutes or until set.

  8. Allow to cool, then turn out and serve.
