What each ingredient does

Oats
Absorb the water and swell, thickening the porridge as their starch gelatinizes.
Water
Hydrates the oat starch and softens the oats as they cook into porridge.

The step that matters

Stir occasionally to prevent burning. Oats and their starch settle to the bottom of the pan and can scorch or stick while the porridge thickens. Regular stirring keeps them suspended and heat evenly distributed.
