Why it works: Barley and lemon work together. They rank in the top 13% of all ingredient pairs, and cooks put them together in 484 recipes. Both carry 3-hexenal, which smells apple, fruity. The science ↓
Barley Jelly
Ingredients
Directions
The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.
Prepare the barley
Wash and steep the pearl barley for 6 hours.
Stew and set
Pour boiling water over the barley and stew it in a covered jar in a hot oven (400°F / 200°C) until soft and the water is absorbed.
Add sugar and essence of lemon halfway through cooking.
Stew for 2½ hours for best color.
Pour into a mold to set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Pearl barley
- Softens into a thick, tender body that gives the jelly its structure.
- Sugar
- Adds sweetness and helps the set mixture hold its shape as it cools.
The step that matters
Stewing until the water is absorbed. Barley must stew long enough to soften fully and absorb the water, since unsoftened starch grains stay firm and grainy. Stewing too briefly leaves the jelly gritty and watery, and it may not set properly.
Swap the lemon
How well each one fits the dish's main ingredients (barley, sugar):

Fit is the average pairing score against barley, sugar. Candidates are from the same food group and used in at least 100 recipes.
