What each ingredient does

Tapioca
Thickens when boiled and sets into a firm, jelly-like body as it cools.
Golden syrup
Adds sweetness and a rich, caramel-like flavour.
Lemon
Lemon juice adds acidity and bright flavour, while the rind adds aroma.

The step that matters

Turn out when cold. Tapioca sets as it cools, so the mould needs to be fully cold before turning out. Turning it out while still warm can cause it to slump or tear.
