Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Provide the main body and starchy, creamy texture of the soup.
Butter
Adds fat for richness and a smooth mouthfeel.
Milk
Adds creaminess and softens the soup's flavour.
Cornflour
Thickens the soup as it heats, giving it body.

The step that matters

Adding the cornflour paste. Cornflour must be mixed into a smooth paste with cold water before being added, otherwise it clumps. Starch thickens only once it is heated and stirred into the liquid, so boiling again afterwards sets the body of the soup.
