Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Provides the main flavour and body of the soup once cooked and sieved.
Flour
Thickens the milk and soup, giving them a smoother, heavier texture.
Milk
Adds creaminess and softness to the soup, softening its flavour.

The step that matters

Smooth the flour with a little of the milk first. Adding flour straight into hot liquid clumps it. Mixing it into a small amount of cold milk first disperses the starch so the soup thickens evenly.

Swap the celery

How well each one fits the dish's main ingredients (milk, flour, pepper, butter):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Cardamomfits better
  4. Celerythe original

Fit is the average pairing score against milk, flour, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
