Columbus Eggs

Ingredients

Directions

Prepare the eggs

  1. Remove the shells from the hard‑boiled eggs and cut them in half lengthwise.

  2. Slice a thin piece off the small end of each egg so they can stand upright.

Fill and assemble

  1. Mix half of the yolks with mayonnaise and chopped nuts to form a paste.

  2. Fill the empty egg whites with the yolk mixture, being careful not to break them.

  3. Press the two halves together and place them upright on a dish.

Top and garnish

  1. Mash the remaining yolks through a sieve.

  2. Mix the mashed yolks with ½ cup of mayonnaise and chopped olives, then pour over the eggs.

  3. Sprinkle the pulverized yolks on top and garnish with watercress or parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Provide the structure and the whites and yolks that form the filling and topping.
Mayonnaise dressing
Adds moisture and richness, binding the yolks into a smooth, spreadable paste.
Finely chopped nuts
Add crunch and a nutty texture to the yolk filling.
Chopped olives
Add briny, salty flavour that contrasts with the rich yolks.

The step that matters

Filling the whites without breaking them. Hard-boiled egg whites are delicate and tear easily. A torn white leaks filling and fails to hold its shape when the halves are pressed together and set upright.

Swap the nuts

How well each one fits the dish's main ingredients (egg, olive, watercress):

  1. Cashew nutfits better
  2. Sesamefits better
  3. Chestnutfits better
  4. Nutsthe original

Fit is the average pairing score against egg, olive, watercress. Candidates are from the same food group and used in at least 100 recipes.
