Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the main structure that sets the cake as it bakes.
Egg whites
Whipped, they trap air that helps the cake rise and gives it a light crumb.
Sugar
Sweetens the cake and, creamed with oil, helps create a tender texture.
Oil
Adds moisture and tenderness, keeping the crumb soft.

The step that matters

Folding in the whipped egg whites. Stirring too hard deflates the foam that gives the cake its lift. Fold gently with a spatula so the air stays trapped and the cake rises well in the oven.
