Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Form the main body of the dish, holding the gravy around their halved surfaces.
Coconut milk
Adds richness and fat, and thickens the gravy as it reduces.
Onion
Softens and sweetens as it fries, forming the flavour base of the gravy.
Curry powder
Provides the spiced aroma that defines the gravy.
Tamarind water
Adds sourness that balances the richness of the coconut milk.

The step that matters

Letting the coconut milk reduce. Coconut milk thickens only as water evaporates during a sustained boil. Adding the tamarind too early, before the liquid has thickened, leaves a thin gravy, and the acidic tamarind can cause the milk to separate if boiled hard for too long.

Swap the clove

How well each one fits the dish's main ingredients (egg, ghee, onion, garlic, coconut, tamarind):

  1. Turmericfits better
  2. Cuminfits better
  3. Corianderfits better
  4. Clovethe original

Fit is the average pairing score against egg, ghee, onion, garlic, coconut, tamarind. Candidates are from the same food group and used in at least 100 recipes.
