What each ingredient does

Bacon
The main ingredient; slow simmering makes the meat tender and renders some of its fat.

The step that matters

Gradually bringing to a boil and skimming. Scum is coagulated protein and impurities released from the meat as it heats. Skimming it as it rises keeps the cooking liquid clearer and the bacon's flavor cleaner.
