Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the bulk of the croquettes and give a soft, tender interior.
Eggs
Bind the mixture so it holds its shape, and form the egg wash that helps breadcrumbs stick.
Butter
Adds richness and fat, giving a softer, more flavorful interior.

The step that matters

Frying in deep hot oil. If the oil is not hot enough, the croquettes absorb oil and turn greasy before the crust sets. Hot oil quickly seals the breadcrumb coating and browns it, keeping the inside creamy.

Swap the potato

How well each one fits the dish's main ingredients (butter, pepper, parsley, nutmeg, egg):

  1. Shallotfits better
  2. Spinachfits about as well
  3. Carrotfits about as well
  4. Potatothe original

Fit is the average pairing score against butter, pepper, parsley, nutmeg, egg. Candidates are from the same food group and used in at least 100 recipes.
