Lobster Rolls

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the sauce

  1. In a saucepan, combine flour and milk or cream.

  2. Stir over heat until it thickens.

  3. Add butter and mix vigorously until well incorporated.

  4. Remove from heat and stir in egg yolks, cayenne, and essence of anchovies.

  5. Mix the lobster pieces with the sauce until combined.

Assemble and bake

  1. Roll out puff pastry into squares.

  2. Place a tablespoon of lobster mixture in the center.

  3. Fold the pastry over to form a case, press edges together, and trim.

  4. Place on a floured baking sheet and bake at 400°F (200°C) for 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine flour
Thickens the milk or cream into a smooth, stable sauce that holds the lobster.
Milk or cream
Forms the liquid base of the sauce, adding moisture and richness.
Butter
Adds fat and richness, giving the sauce a smooth, silky mouthfeel.
Egg yolks
Enrich and further thicken the sauce, adding richness and body.
Puff pastry
Forms a flaky, layered case that puffs and browns in the oven.
Cooked lobster
Provides the main filling, with its sweet, delicate flavour and tender texture.

The step that matters

Stirring the sauce over heat until thickened. Flour must be cooked while stirred so it thickens evenly without lumps. Egg yolks added off the heat are less likely to scramble, which keeps the sauce smooth.
