  1. Boil the potatoes until white, mealy, and very tender.

  2. Rub the potatoes through a colander while hot.

  3. Mix in the butter until well combined.

  2. Add the lemon rind and juice, then fold in the beaten egg whites.

  3. Pour the mixture into pie plates lined with pastry.

Bake and serve

  1. Bake at 400°F (200°C) until set and lightly browned.

  2. Serve cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk of the filling, giving a soft, smooth body when riced while hot.
Butter
Adds richness and fat, giving a softer, more tender texture to the pudding.
Eggs
Set during baking to give structure, and the whites add lightness to the mixture.
Fine sugar
Adds sweetness and helps make the yolks smooth and the custard tender.
Lemon
Its rind and juice add aroma and acidity that brighten the sweet filling.

The step that matters

Bake until set and lightly browned. Egg proteins set as they heat, so underbaking leaves the filling runny, while overbaking can make it dry and rubbery. Watch for a firm centre and light browning.

Swap the potato

How well each one fits the dish's main ingredients (butter, egg, sugar, lemon):

  1. Asparagusfits better
  2. Leekfits better
