Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly structure as it cools.
Egg white
Whisked into foam, it lightens the texture and helps the mixture hold its shape.
Loaf sugar
Adds sweetness and helps balance the sharpness of the lemon.
Lemon juice
Adds acidity and bright lemon flavour.
Lemon rind
Adds aromatic lemon oils for fragrance and flavour.

The step that matters

Melt the gelatine carefully over low heat. Gelatine can lose its setting power if it is overheated or boiled, so gentle heat is needed to dissolve it fully and keep the dessert firm when cooled.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  2. Raisinfits about as well
  3. Lemonthe original
