Oysters, Vol-au-Vent of
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Roll out puff pastry to about 1 inch thick.
Cut out an oblong piece of pastry using a tin cutter, nearly the size of a small dish.
Use a smaller cutter to cut halfway through the pastry, 1 inch from the edge.
Bake in a 400°F (200°C) oven.
Remove the lid and any soft part from the inside.
Fill with the oyster mixture.
Replace the lid and serve.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
