Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the chestnuts

  1. Boil the chestnuts for 45 minutes.

  2. Blanch the boiled chestnuts.

  3. Beat the blanched chestnuts into a paste.

Make the custard

  1. Beat the 6 eggs in a bowl, then add the reserved egg whites to the beaten eggs.

  2. Add cinnamon and coarse sea salt to the egg mixture.

  3. Mix in the chestnut paste to the egg mixture.

  4. Add the sweet milk to the mixture, then add the melted butter to the mixture.

Bake

  1. Line a dish with puff pastry.

  2. Pour the mixture into the lined dish.

  3. Bake at 350°F (175°C) until set.

What each ingredient does

Chestnuts
Form the bulk of the paste, giving the pudding its body and mild, sweet nutty flavour.
Eggs
Set the mixture when baked, giving the pudding its structure and a firm, sliceable texture.
Sweet milk
Adds moisture and softness, loosening the paste into a smooth custard that sets gently.
Butter
Adds richness and fat, contributing to a tender texture and smooth mouthfeel.

The step that matters

Bake until set. Eggs set as their proteins coagulate with heat. Pull the pudding once the centre just wobbles and no longer looks liquid, since overbaking makes it dry and grainy.
