Oysters with Crayfish and Livers

Ingredients

Directions

  1. Cut the livers into equal sizes.

  2. Season the livers with sweet herbs, spices, and coarse sea salt.

  3. Dip the livers in yolks of eggs, then roll them in breadcrumbs.

  4. Thread the livers and oysters onto silver skewers.

  5. Broil the skewers in buttered paper or a case.

  6. Serve with buttered gravy and lemon juice, garnished with lemon slices.

  7. If using crayfish, place a bit of anchovy in each claw before threading. Crisp the crayfish in the oven before skewering.
