Gravy of Veal

Ingredients

Directions

  1. Wash and clean the Endive, removing the outer leaves.

  2. Blanch the heads in hot water, then transfer to cold water and squeeze dry.

  3. Stew the Endive in enough gravy to cover them, adding sugar and salt.

  4. When tender, add white sauce or consomme and serve hot.

  5. In a separate pan, melt butter and add chopped young onions.

  6. Once dry, sprinkle with flour and add seasoned gravy.

  7. Let it stew gently for about 10 minutes and serve on sippets.
