Souffle of Sweet Potato

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil the macaroni until tender, then drain and cut into small pieces.

  2. Prepare a soufflé mixture as directed for vanilla soufflés, flavoring with essence of bitter almonds.

  3. Stir in the macaroni when the mixture thickens, then add the yolks of 10 eggs.

  4. Once cooled, fold in the beaten egg whites.

  5. Boil sweet potatoes until tender, then bake in hot embers until dry and floury.

  6. Scoop out the insides and mix with boiled cream flavored with lime peel, sugar, butter, and salt.

  7. Add 4 egg yolks to the potato mixture, then fold in the beaten egg whites.

  8. Pour into a soufflé dish, add 1 tablespoon of butter, and bake at 350°F (175°C).

  9. Once done, sift sugar over the top and use a salamander to finish.
