What each ingredient does

Chowlahee greens
Form the bulk of the dish and carry the flavour of the spices.
Ghee
Adds fat for frying the onion and garlic and gives a rich, nutty flavour.
Onion
Frying until golden adds sweetness and a savoury base.
Garlic
Frying until brown adds a deep, aromatic flavour.
Eggs
Add protein-based richness and a firm, sliced topping when boiled until hard.

The step that matters

Boil the greens for 15 minutes. Boiling softens tough leaves and removes bitterness, and draining well keeps excess water from diluting the frying ghee and spices.
