What each ingredient does

Liver
Forms the main body of the dish, giving it a rich, savoury texture when chopped or pounded.
Melted butter
Adds fat and smoothness, carrying flavour and helping the mixture stay soft and spreadable.
Parsley
Contributes fresh, green aroma and a light herbal flavour that balances the rich liver.

The step that matters

Warm the mixture gently, but do not let it boil.. Butter and liver proteins are sensitive to high heat. Boiling can cause the butter to separate and the liver to turn grainy and tough, so gentle warming keeps the mixture smooth and cohesive.
