Apple Tart

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Peel and quarter the apples, removing the cores.

  3. Place the apples in a baking dish with grated lemon peel, cloves, and sugar.

  4. Add a little water to the dish.

  5. Roll out the puff pastry on a floured surface with a rolling pin.

  6. Cut some pastry very thin and moisten the edges of the dish with water.

  7. Cover the apples with the rolled pastry and press the edges to seal.

  8. Trim any excess pastry from the edges.

  9. Use the back of a spoon to create shell-like marks around the edges.

  10. Whip the egg white and brush it over the pastry.

  11. Sprinkle a little sugar over the egg wash.

  12. Lightly sprinkle water over the sugar to prevent burning.

  13. Place the tart on a baking tray and bake carefully until golden.
