  2. Soak the bread crumbs in boiling milk until softened.

What each ingredient does

Carrots
Pounded to a smooth purée, they add moisture, body and gentle sweetness to the pudding.
Bread crumbs
Soaked in milk, they swell and give the pudding its tender, bound body.
Eggs
Beaten eggs set when baked, giving the pudding its structure.
Milk
Softens the bread crumbs and adds moisture to the custard-like mixture.
Sugar
Adds sweetness and helps the top brown lightly in the oven.

The step that matters

Bake until set and lightly browned. Egg proteins set as they heat, so underbaking leaves the pudding loose and wet in the centre, while overbaking makes it dry and rubbery.

Swap the lime

How well each one fits the dish's main ingredients (carrot, bread, milk, sugar, orange, cinnamon, egg):

  1. Vanillafits better
  2. Figfits better
