Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells as it cooks and thickens the milk into a soft, creamy body.
Egg yolks
Enrich the custard and help it set into a tender, sliceable texture when baked.
Egg whites
Add lightness and help the pudding set with structure as they cook.
Milk
Provides the liquid base that the tapioca cooks in and the custard sets from.
Sugar
Adds sweetness and softens the set texture slightly.
Clarified butter
Adds richness and a smooth, fatty mouthfeel.

The step that matters

Cooling before adding the eggs. If the thickened tapioca is still hot when the egg yolks and whites go in, the eggs can scramble into lumps instead of blending smoothly into the custard. Letting it cool first keeps the texture silky and even.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, egg, brandy, sugar, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Clovefits less well
  4. Gingerfits less well

Fit is the average pairing score against milk, egg, brandy, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
