A Very Excellent Mild Curry

Ingredients

Directions

  1. Grate the inside of a ripe cocoa-nut and place it in a bowl.

  2. Pour ½ pint of boiling water over the cocoa-nut and let it sit for 1-2 minutes.

  3. Strain the mixture and set the liquid aside.

  4. Repeat the process with 1 pint of hot water, stir, and strain into a saucepan.

  5. Add your choice of meat, fowl, or fish to the cocoa-nut water.

  6. Include 1 clove of garlic, 1-2 chopped onions, 1 dessert spoonful of turmeric, 6 halved green chillies, and a few slices of green ginger.

  7. Season with coarse sea salt and bring to a boil.

  8. As the meat, fowl, or fish cooks, add 2 tablespoons of fresh butter and stir well.

  9. When nearly done, add the reserved cocoa-nut water and squeeze in the juice of 1 lime.

  10. Serve with optional slices of green mango.
