What each ingredient does

Chowlahee greens
Form the main body of the dish, becoming tender when boiled and simmered.
Ghee
Fat for frying the onions and garlic, adding richness and browning flavour.
Onions
Frying them in ghee builds sweetness and savoury depth into the curry.
Garlic
Frying until brown adds a toasted, aromatic flavour to the greens.
Eggs
Boiled until hard, they add protein-rich body and a mild, creamy contrast.

The step that matters

Boil the eggs until hard. Eggs boiled too long develop a grey-green ring around the yolk and a rubbery white, because overcooked proteins tighten and sulphur compounds react with iron. Timing keeps the yolk set but tender.

Swap the onion
