Braut Torte — Bride Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the cake batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter until smooth.

  3. Gradually add the sugar, mixing well.

  4. Beat in the egg yolks, lemon peel, and nutmeg.

  5. Stir in the ground almonds and flour until well combined.

  6. Fold in the whipped egg whites gently.

  7. Pour the batter into buttered round tins lined with buttered paper.

  8. Bake until deep yellow, about 25‑30 minutes.

Make the sauce

  1. Warm the butter for the sauce in a saucepan.

  2. Stir in powdered sugar, lemon peel, egg yolks, and lemon juice.

  3. Cook the sauce until thickened.

  4. Remove the sauce from heat.

  5. Stir the sauce until cool.

Assemble and ice

  1. Spread the sauce over three cakes.

  2. Stack the cakes.

  3. Place the fourth cake on top.

  4. Smooth the sides with a sharp knife the next day if needed.

  5. Ice the entire cake with lemon icing.

  6. Decorate as desired.

What each ingredient does

Almonds
Provide body and a tender, moist crumb, with fine ground nuts adding richness.
Fresh butter
Adds fat for a tender texture and rich flavour, and helps trap air when creamed.
Egg yolks
Add richness, colour and moisture, and help bind the batter.
Egg whites
Whipped and folded in to lighten the batter and help it rise.
Fine flour
Forms the main structure of the cake as its proteins set during baking.
Sugar
Sweetens the cake and helps tenderise the crumb when creamed with butter.

The step that matters

Fold in the whipped egg whites gently. Whipped egg whites hold air that gives the cake its lift. Vigorous stirring knocks that air out, leaving a dense cake.
