Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavour, colour and fruit body of the cream.
Isinglass
Gelatin-like setting agent that firms the mixture as it chills.
Heavy cream
Whipped to a light froth, it adds richness and a soft, airy texture.
Pounded sugar
Sweetens the strawberry base and balances the tartness of the fruit and lemon.
Lemon juice
Adds acidity that brightens the strawberry flavour.

The step that matters

Stirring on ice until it begins to set. Chilling while stirring cools the mixture evenly and forms a fine set. If it sets in lumps or too far before the cream is folded in, the mixture will be grainy and won't blend smoothly with the whipped cream.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream):

  2. Strawberryfits better
  3. Raspberryfits better

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
