What each ingredient does

Isinglass
Gelatin-like protein that sets the liquid into a firm jelly when cooled.
Sugar
Sweetens the jelly and helps give the syrup body and a clear, set texture.
Strawberries
Provide the main fruit flavour and aroma of the jelly.
Red-currant juice
Adds tart fruit flavour and acidity that balances the sweetness.
Lemon juice
Adds acidity that brightens the flavour and sharpens the strawberry taste.

The step that matters

Combine the isinglass while it is nearly cold. If the isinglass mixture is still hot, it can weaken its setting power and the jelly may fail to firm properly. If it is too cold, it may thicken unevenly and form lumps before it is evenly blended with the fruit.

Swap the currant

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits better
  4. Currantthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
