Lemon Wine

Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients

Directions

Prepare the base

  1. Boil 1 gallon of water with 3 lbs of sugar for 1 hour.

  2. Pour the hot mixture over the peel of 4 lemons.

  3. Make a syrup by boiling the juice of the lemons with 1 lb of sugar.

  4. Mix the syrup with the water and sugar mixture.

Ferment and age

  1. When cool, add a toast covered with yeast.

  2. Let it stand for 2 days to start fermentation.

  3. Transfer to a barrel, keeping it filled until fermentation subsides.

  4. Seal the barrel and bottle the wine after 3 months.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Feeds the yeast during fermentation and provides the sweetness of the finished wine.
Lemon peel
Adds aromatic oils that give the wine its lemon flavor.
Lemon juice
Adds acidity and bright citrus flavor to the wine.
Yeast
Converts the sugar into alcohol and carbon dioxide during fermentation.

The step that matters

Keeping the barrel filled. While fermentation subsides, the liquid is exposed to air at the surface. Keeping the barrel full limits air contact, which helps prevent spoilage and off-flavors.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, syrup):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, syrup. Candidates are from the same food group and used in at least 100 recipes.
