Preserved Peaches

Ingredients

Directions

  1. Make a strong syrup by boiling sugar and skimming it well.

  2. Rub the lint off the peaches with a cloth.

  3. Use a needle to run down the seam of each peach to the depth of the skin.

  4. Place the peaches in a jar and cover them with brandy for 2 hours.

  5. Transfer the peaches to a preserving pan, ensuring they lie singly.

  6. Pour the syrup over the peaches and boil until they look clear, being careful not to break them.

  7. Remove the peaches with a spoon into glasses and let the syrup cool.
