Toffee

Ingredients

Directions

Make the toffee

  1. In a saucepan, combine sugar, cream, and essence of vanilla.

  2. If desired, stir in blanched and shredded pistachios.

  3. For chocolate toffee, mix in 1 oz of best vanilla chocolate with a little cream, gradually adding more until you have used ½ cup.

  4. Add 6 oz of fresh butter and 12 oz of brown sugar to the mixture.

  5. Stir in 1 tablespoon of treacle and boil for 20 minutes, stirring constantly to prevent sticking.

  6. Add a little essence of vanilla, then pour onto a buttered tin to cool.

Set and cut

  1. Cut into bars once partially set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and, when boiled, the hard set that gives toffee its structure.
Cream
Adds richness and softness, giving the toffee a smoother, less brittle texture.
Fresh butter
Adds fat for a rich flavour and a tender, melting bite.
Brown sugar
Adds caramel notes and extra colour to the toffee.
Treacle
Adds depth, colour and a molasses-like flavour, and helps keep the toffee chewy.

The step that matters

Stirring while boiling. The mixture can scorch or stick to the base of the pan during the 20-minute boil. Constant stirring spreads the heat evenly and keeps sugar from burning, which would make the toffee bitter.

Swap the pistachio

The recipe marks pistachio as optional. How well each one fits the dish's main ingredients (sugar, cream, vanilla, butter, ginger):

  1. Almondfits better
  2. Chestnutfits about as well
  3. Cashew nutfits about as well
  4. Pistachiothe original

Fit is the average pairing score against sugar, cream, vanilla, butter, ginger. Candidates are from the same food group and used in at least 100 recipes.
