Omelet

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Beat the eggs well together until yolks and whites are fully combined.

  2. Grease a smooth pan with butter and heat it over moderate heat.

  3. Pour the beaten eggs into the pan and cook until the edges are set.

  4. Optionally, place the pan in a 400°F (200°C) oven for 1 minute to set the center.

  5. Fold the omelet in 2 or 3, making it long and narrow.

  6. Quickly turn a hot dish over the omelet and flip both the pan and dish together.

  7. Garnish with parsley and serve immediately.
