Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tart apples
Provide the main body and tartness that balances the sweet sauces served with the pudding.
Bread crumbs
Absorb moisture and give the pudding a soft, bound body.
Eggs
Whites trap air for lightness while yolks add richness and help set the pudding.

The step that matters

Folding in the egg whites. Folding gently keeps the air beaten into the whites, which lifts the pudding. Stirring vigorously deflates the foam and leaves a dense result.
