Lemon Jelly

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the jelly

  1. Soak the gelatine in cold water for 5 minutes.

  2. In a bowl, combine the lemon juice and soft sugar until dissolved.

  3. Add the soaked gelatine to the boiling water and stir until fully dissolved.

  4. Mix the gelatine mixture with the lemon juice mixture.

  5. Whip the egg white until frothy and add it along with the shell to the mixture.

Set

  1. Let the mixture cool, then pour it into a mold and refrigerate until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools and chills.
Lemon juice
Provides the sharp acidity that gives the jelly its bright flavour.
Soft sugar
Sweetens the jelly and balances the sourness of the lemon juice.
Egg white
Its proteins trap impurities and, with the shell, help clear the jelly.

The step that matters

Let the mixture cool before pouring into the mold. Gelatine sets as it cools, so the mixture must be cooled to avoid a weak or uneven set and to keep the clarifying egg white and shell from being disturbed.
