  1. Skim the sugar until well-skimmed.

  2. Add the watermelon rind, sliced lemon, and tender ginger to the syrup.

  3. Optionally, add a little of the water used to boil the ginger for flavor.

  4. Boil until the rind is rich and transparent.

  5. Skim the fruit into jars or tumblers.

  6. Boil down the syrup for 15 to 20 minutes.

  7. Pour the syrup generously over the fruit.
