What each ingredient does

Grape juice
Provides the liquid base, flavor and acidity that the jelly sets from.
Sugar
Sweetens the jelly and helps it set into a firm gel as water boils off.

The step that matters

Rapid boil of the juice. Boiling drives off water, concentrating the sugar and the grape's natural gelling compounds so the mixture can set. Boiling too briefly leaves a runny jelly that will not firm up as it cools.
