What each ingredient does

Vinegar
Acts as the preserving liquid, its acidity keeping the onions stable and giving them a sharp flavor.
White onions
Provide the main body and texture of the pickle, softening and turning mellow during the wait.
Whole allspice
Adds warm, aromatic spice flavor that infuses into the vinegar.
Whole black pepper
Adds sharp, aromatic heat that infuses into the vinegar.

The step that matters

Sealing the jars tightly. Keeping air out limits oxidation and spoilage, and the onions need the full two-week rest so the vinegar and spices can penetrate them evenly.
