Ingredients

Directions

Prepare the batter

  1. Drain the liquid from the can of corn.

  2. Break the egg into the corn and add salt, pepper, and sugar; beat well.

  3. Stir in enough flour to make a batter that is stiff enough to drop from a spoon.

  4. Add baking powder, using 1 teaspoon for every cup of flour, as needed.

Fry and serve

  1. Heat lard in a deep pan until boiling.

  2. Drop the batter by small teaspoonfuls into the hot lard.

  3. Fry until golden brown on all sides, then remove and drain on a sieve or brown paper.

  4. Serve very hot on a folded napkin or fancy paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn
Provides bulk, sweetness, and moisture that give the fritters their tender interior.
Egg
Binds the corn and flour together so the batter holds its shape in the fat.
Flour
Gives the batter body so it is stiff enough to drop and sets as it fries.
Baking powder
Releases gas during frying, making the beignets puff and lighten inside.
Lard
Conducts heat for frying, browning the outside to a golden crust.

The step that matters

Heating the lard until boiling before frying. Batter dropped into fat that is not hot enough absorbs more oil and turns greasy and heavy. A hot fat surface seals the outside quickly, so the beignets brown and puff rather than soak up oil.
