What each ingredient does

Chicken
Provides the main protein, and cooking it in broth helps keep it moist.
Vermicelli
Forms the base of the dish and soaks up the broth flavor as it softens.
Chicken broth
Cooks the chicken and vermicelli while adding savory flavor and moisture.

The step that matters

Boiling and draining the vermicelli until just tender. Thin noodles keep softening from residual heat after they leave the pot, so they can turn mushy if overcooked. Draining well removes surface liquid that would otherwise dilute the dish.
