Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter.

  3. Add corn starch, milk, and baking powder; mix well.

  4. Fold in the beaten egg whites gently.

  5. Pour the batter into a greased cake pan and bake until golden.

Make the filling

  1. For the filling, boil 2 cups of sugar with ¼ cup of water until it reaches a hair's breadth consistency.

  2. Slowly pour the hot syrup into the beaten egg whites while whisking continuously.

  3. Add chopped nuts to the filling if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, giving the cake a tender crumb and flavor.
Corn starch
Tenderizes the crumb and softens the structure of the cake.
Eggs whites
Beaten whites trap air and set during baking, giving the cake lift and structure.
Baking powder
Releases gas during baking so the batter rises and becomes light.
Sugar
Sweetens the cake and helps it brown; in the filling it forms a syrup.

The step that matters

Pouring the hot syrup into the egg whites. The syrup must be added slowly while whisking constantly. Pouring too fast can cook the egg whites unevenly or deflate them, so the filling loses its airy texture.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (sugar, butter, corn, milk, egg):

  1. Almondfits better
  2. Pecansfits better
  3. Peanutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, butter, corn, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
