To Boil Tripe

Ingredients

Directions

  1. Clean the tripe thoroughly and remove the fat.

  2. Soak it overnight in a mixture of salt and water.

  3. Wash it again and soak it in milk and water for the same duration.

  4. Cut the tripe into small pieces, roll them, and tie with thread.

  5. Place the tripe and a clean marrow bone into a linen bag and tie it securely.

  6. Put the bag into a covered stew pan, fill with water, and boil gently for six hours.

  7. Remove the tripe from the bag and place it in a jar, pouring the cooking liquid over it.

  8. To serve, boil small whole onions in some of the cooking liquid, add a little salt, then heat the tripe thoroughly.

  9. Alternatively, fry the tripe in butter, fricassee it, or stew it in a brown sauce.
