Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk of the soft, tender dough that holds the filling.
Flour
Adds structure to the potato paste so it can be rolled and folded.
Butter
Adds richness and moisture to the dough and filling.
Cold roasted meat
Forms the savoury filling at the centre of each half circle.

The step that matters

Frying in boiling dripping. The fat must be hot enough to brown the outside quickly. If it is too cool, the pastry absorbs grease, turns heavy, and the filling may not heat through evenly.

Swap the potato

How well each one fits the dish's main ingredients (flour, butter, meat, pepper):

  1. Shallotfits about as well
  2. Potatothe original
  3. Capsicumfits about as well
  4. Leekfits about as well

Fit is the average pairing score against flour, butter, meat, pepper. Candidates are from the same food group and used in at least 100 recipes.
