What each ingredient does

Lamb's head
Forms the main body of the dish, with its meat as the centerpiece.
Egg yolk
Binds the breadcrumb coating to the head and promotes even browning.
Breadcrumbs
Forms a crisp, golden crust on the outside during baking.
Flour
Thickens the minced mixture and gravy into a stable, spoonable sauce.
Butter
Adds richness and helps the crust brown in the oven.

The step that matters

Browning the breadcrumb crust in the oven. Breadcrumbs brown through the Maillard reaction, which needs dry surface heat. If the crust is wet or the oven is too cool, it steams and turns pale and soggy instead of golden.
