Orange Pudding

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Beat the egg yolks until light and fluffy.

  2. In a separate bowl, beat the egg whites until stiff peaks form.

  3. Mix the yolks with the grated sugar and crushed sugar biscuits.

  4. Add the orange marmalade and mix well.

  5. Melt the butter over low heat and stir it into the mixture just before baking.

  6. Line a baking dish with puff pastry.

Bake

  1. Pour the mixture into the lined dish.

  2. Bake in a preheated oven at 400°F (200°C) for 15 to 20 minutes.

What each ingredient does

Egg yolks
Enrich the custard and add richness and a smooth, set texture.
Egg whites
Whipped to stiff peaks to lighten the mixture and give it rise and airiness.
Grated loaf sugar
Adds sweetness and dissolves easily into the yolks for a smooth batter.
Sugar biscuits
Crushed to add body and a subtle sweet, toasty flavour to the filling.
Orange marmalade
Adds bright citrus flavour, sweetness and a touch of acidity.
Butter
Adds fat for richness and a tender, moist crumb.

The step that matters

Folding in the egg whites. The whites were whipped separately, so they must be folded in gently. Stirring them vigorously knocks out the air trapped in the foam, which limits the rise and lightness the pudding gets in the oven.

Swap the orange

How well each one fits the dish's main ingredients (egg, sugar, biscuit, butter):

Fit is the average pairing score against egg, sugar, biscuit, butter. Candidates are from the same food group and used in at least 100 recipes.
