What each ingredient does

Ground rice
Thickens the milk as it cooks, giving the pudding body and a soft, set texture.
Whole milk
Forms the liquid base that the rice cooks in and sets around as it bakes.
Egg yolks
Enrich the custard and help it set into a smooth, tender texture when baked.
Melted butter
Adds fat for richness and a smooth, tender mouthfeel.
Sugar
Sweetens the pudding and helps it brown lightly on top.

The step that matters

Let the mixture cool before adding the eggs. Adding beaten eggs to a very hot mixture can scramble them, leaving specks of cooked egg instead of a smooth custard. Cooling first lets the eggs blend evenly and set into a uniform texture in the oven.

Swap the orange

How well each one fits the dish's main ingredients (rice, milk, butter, sugar, nutmeg, lemon, egg):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Orangethe original

Fit is the average pairing score against rice, milk, butter, sugar, nutmeg, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
