Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Forms the rich body of the custard and carries the lemon flavour.
Egg yolks
Thicken the custard as they set with gentle heat, giving it a smooth texture.
Egg whites
Add structure and lightness to the custard mixture when beaten in.
Flour
Stabilises the custard so it thickens without curdling during cooking.
Loaf sugar
Sweetens the custard and forms the caramel crust when browned.

The step that matters

Stir over low heat until thickened like custard. Egg proteins set at moderate temperatures, and high heat can scramble the eggs and curdle the custard. Gentle, constant stirring keeps it smooth.

Swap the orange

How well each one fits the dish's main ingredients (cream, lemon, sugar, egg, flour):

  1. Raisinfits better
  2. Vanillafits better
  3. Raspberryfits about as well
  4. Orangethe original

Fit is the average pairing score against cream, lemon, sugar, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
