Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides fat and richness, and freezes into a smooth, creamy texture.
Raspberry jelly
Adds raspberry flavor and sweetness to the base.
Pounded loaf sugar
Sweetens the mixture and helps soften the texture of the frozen cream.
Lemon juice
Adds acidity that brightens the raspberry flavor.

The step that matters

Turning the pot while it freezes. Turning and stirring keep ice crystals small and the cream smooth. If the mixture is left to sit, it freezes into a coarse, icy texture.
