Potato Biscuit

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Beat the yolks and whites of the eggs separately.

  2. Mix the yolks with the powdered sugar and lemon peel until light.

  3. Gently fold in the beaten egg whites.

  4. Sift in the potato flour and mix lightly.

Bake and serve

  1. Half-fill paper cases with the mixture and sprinkle with roughly pounded sugar.

  2. Place the paper cases on a board and bake in a moderate oven (350°F / 175°C).

  3. Decorate the tops with small amounts of red-currant jelly before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air for lightness, and yolks add richness and structure as the biscuit sets.
Powdered sugar
Creams with the yolks to lighten the batter and adds sweetness.
Potato flour
Provides a light, tender crumb with less gluten than wheat flour.
Lemon peel
Adds aromatic citrus flavour to the batter.

The step that matters

Folding in the egg whites. Whites hold the air that makes the biscuit light. Folding gently, rather than stirring, keeps that air from collapsing, so the biscuits rise and stay tender in the oven.

Swap the currant

How well each one fits the dish's main ingredients (egg, sugar, lemon, potato, flour):
