Another Way to Make Spunge Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a bowl, beat the yolks of 10 eggs with the sugar until it stands when dropped from a spoon.

  2. Add the yolks and whites of the remaining 2 eggs separately.

  3. Whisk the 10 egg whites for 8 minutes until stiff.

  4. Mix in the lemon juice, then take a portion of the egg whites and fold it into the yolk mixture while beating continuously.

  5. Gently fold in the flour and grated lemon peel.

Bake

  1. Pour the batter into a buttered tin, filling it no more than halfway.

  2. Bake until golden and a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air, giving the sponge its light, airy structure.
Sugar
Sweetens the cake and helps the beaten yolks thicken into a stable base.
Flour
Provides the structure that holds the airy batter once it bakes.
Lemon
Juice adds acidity and the grated rind adds aroma.

The step that matters

Gently fold in the flour and lemon peel. The batter's rise depends on the air trapped in the whipped egg whites. Vigorous stirring deflates that foam, so the flour should be folded in gently and only until combined.

Swap the lemon
